Souvlaki with Cottage Cheese Tzatziki

Take a Greek staple and create a version that’s higher in protein, lighter, and the perfect versatile recipe to enjoy on the go or for a little no-fuss summer entertaining spread.

Method

1.

Whisk together the olive oil, thyme, salt, garlic, lemon juice, and zest in a large bowl. Add the cubed beef and mix well. Leave in the fridge, covered, to marinate for a minimum of 1 hour (up to 4 hours).

Place the cucumber into a bowl and sprinkle with 1 tsp salt. Leave to sit for 10 minutes. Pour the excess liquid off.

Add the Brancourts Cottage Cheese to the cucumbers and fold in the remaining ingredients. Set aside.

Place the marinated beef onto skewers.

Heat a grill pan and cook the skewers for 8-10 minutes, turning every few minutes to cook evenly. Grill the pita just before serving and lather it with the cottage cheese Tzatziki, skewers, tomato, and onion. Finish with fresh mint (optional).

Ingredients

For the Tzatziki:

1 cup Brancourts Cottage Cheese

1/2 cucumber, halved, de-seeded and sliced

1/4 cup mint, diced

1 tbsp dill, diced

1 tbsp olive oil

1 garlic clove, minced

1/2 tsp salt

For the Galette:

¼ cup olive oil

1 tbsp dried thyme

1 tsp salt

1 lemon, juiced

1/2 lemon, zested

2 garlic cloves, minced

500 grams sirloin steak, sliced into cubes (chicken, pork, or lamb also work well!)

2 tomatoes, sliced

1 red onion, sliced

6 pitta bread
