Crispy Three Veg & Cottage Cheese Fritters

These foolproof fritters hit protein and carb goals for balanced nutrition, as well as being wrapped in a tasty, crispy exterior. Perfect meal prepping for healthy lunches, and freezer-friendly too.

Method

1.

Add the eggs, Brancourts Protein+ Cottage Cheese, corn, spinach, spring onions, peas, and salt & pepper to a large bowl and mix well.

Add the flour and mix until incorporated. Scoop 1 tablespoon of batter into your hands (oiled slightly) and form a flat fritter. Place on a plate and refrigerate for 1 hour.

Heat a nonstick frying pan with the oil. Place 2-3 fritters into the pan, ensuring not to overcrowd the pan. Cook on medium heat, until golden (4-5 minutes) before flipping and cooking for a further 2-3 minutes. Place onto a paper towel and repeat with the remaining fritters.

Serve hot with avocado, Thai basil leaves, and sea salt.

Ingredients

2 spring onions, finely chopped

1 cup Brancourts Protein+ or Classic Cottage Cheese

1 corn knob, cut off the knob

2 cups baby spinach, chopped

1/2 cup cabbage, shaved

2 eggs

1 1/2 cups self-raising flour

1 tsp salt

1/2 tsp ground black pepper

3 tbsp vegetable oil

1/2 avocado, sliced

Thai basil & sea salt to serve
