Crispy Potatoes with Harissa Sauce

We've elevated the classic crispy potatoes recipe by blending our new 97% Fat Free Cottage Cheese and harissa for a delightful spicy kick. This sophisticated side dish is perfect for impressing guests at any dinner party.

Method

1.

Preheat oven to 220ºC fan forced. Line a baking tray with baking paper.

Bring a large pot of salted water to a boil. Add potatoes and boil for 15 minutes, or until soft. Drain the potatoes and set aside to cool for 5 minutes.

Place potatoes in a wide, shallow bowl. Drizzle with olive oil and gently toss. Spread potatoes across the baking tray and season with sea salt. Bake for 40 minutes, flipping as needed, until all sides of the potato are crisp and browned. Set aside to cool.

In a small bowl, add the cottage cheese, harissa, salt and black pepper. Stir until all ingredients are combined well. Set aside.

5.

Pour potatoes into a large bowl. Add garlic, parmesan, chives and pepper. Gently stir all ingredients together.

6.

Spread the harissa sauce over a large serving plate. Top with crispy potatoes, sprinkling any leftover parmesan seasoning on top. Enjoy!

1/4 cup extra virgin olive oil

6 kipler potatoes, cubed

2 teaspoons sea salt

2 garlic cloves, minced

3/4 cup parmesan grated

1/3 cup chives, finely sliced

200g Brancourts 97% Fat Free Cottage Cheese (or any of our Brancourts Cottage Cheese range)

2 tablespoon harissa

1/2 teaspoon black pepper
